Puliyodharai( Puliyogare/Tamarind rice) is one of the popular prasadam in most Vishnu temples like sarkarai pongal and ven pongal. Temple puliyodharai has unique taste. It is also made at home for festivals like chitra pournami, Adi( Tamil month) 18 and for Kanum pongal. You can make puli kachal ( Tamarind concentrate with all ingredients) and store them. Then you mix with rice for easily preparing puliyodharai rice for lunch, picnics etc. It can also be made as a dry powder which can then be used for preparing instant puliyodharai. It is nowadays available in shops under various brand names.


Raw rice ½ cup

Tamarind 2 lemon size (approx. 40 grams)

Black pepper ½ tsp

Red chili 2 +15 nos.

Coriander seeds 1 tbsp

Sesame seeds 2 tsp

Fenugreek 1 ½ tsp

Turmeric powder ½ tsp

Hing powder 1 tsp

Mustard 2 tsp

Groundnuts 4 tsp

Urad dhal 4 tsp

Channa dhal 4 tsp

Gingelly Oil ¼ cup + 3 tsp

Curry leaves


Preparation time = 10 min

Making time = 30 min



Text procedure

Step 1

Squeeze tamarind in 2 cups of water

Step 2

Dry roast black pepper, red chili and dhaniya ( coriander seeds). Dry roast sesame seed separately and add to dhaniya mixture. Dry roast fenugreek and add hing and turmeric powder. while grinding.

Step 3

Grind Dhaniya mixture separately. Also grind fenugreek mixture separately.

Step 4

Heat gingelly oil in a pan.Add mustard. Let it splutter.Then add red chili, groundnuts,urad dhal,channa dhal. Stir till it turns to golden colour.

Step 5

Add tamarind water and salt. Boil till it thickens.

Step 6

Add fenugreek mixture powder and 1 tbsp of coriander seed ( dhaniya ) mixture powder. Mix well and cook for 1 minute.

Step 7

Puli kaichal( tamarind concentrate) is ready. You can store it for 1 month in refrigerator.

Step 8

Add gingelly oil and salt in cooked rice. Mix puli kaichal and 1 tbsp of coriander seed powder. Mix well. Traditional puliyodharai( tamarind rice) is ready
