Stuffed Brinjal and Ivy gourd (Stuffed ennai Kathirikkai and Kovakkai) is simple to prepare ,crispy and tasty side dish which can be taken along with rice. Here the vegetable is stuffed with a specially prepared dry powder ( Araichu vitta Podi)
Brinjal ( In Tamil “Kathirikkai”) – 250 g (or)
Ivy gourd(Kovakkai) – 400 g
Mustard – 1 tsp
Oil – 1 to 1 ½ tbsp
For dry powder (used for stuffing)
Red chilli – 2nos.
Coriander seeds – 1 tbsp heaped
Urad dhal – 1 tbsp heaped
Besan dhal – 1 tbsp heaped
Hing -1/2 tsp
Turmeric -1/4 tsp
Salt to taste
Oil – 1 tsp
Preparation time : 15 min
Cooking time : 30 min
Take Oil 1 tsp in pan. Add the following items – Red chilli 2 nos, Coriander seeds 1 tbsp heaped, Besan dhal 1 tbsp heaped, Urad dhal 1 tbsp heaped,Hing 1/2 tsp. Roast till golden brown color. Add Turmeric powder 1/4 tsp, salt to taste and dry grind to powder for filling/stuffing.The powder will be sufficient for stuffing 250 g brinjal or
400g Ivy gourd.
Remove stalk from brinjal . Make slits keeping bottom intact. Then stuff the dry powder. Similarly slit Ivy gourd keeping bottom intact and stuff the dry powder.

Once the vegetables are cooked , they are ready for roasting/ frying. Add Oil 1- 1 1/2 tbsp in pan keeping stove in low-medium flame. Add mustard 1 tsp and allow to crackle. Then add steamed brinjal and roast till it becomes crisp
Follow the same procedure for Ivy gourd also.
