Paruppu Usili – A Tamil Nadu famous vegetable side dish that is made during festivals and special functions. The vegetable could be beans,cluster beans, plantain flower and capsicum. The method adopted is very simple, non sticky and uses very little oil.


French beans 250 grams
Toor dhal 1/2 cup
Channa dhal 2 tbsp
Red chili 2 nos.
Turmeric powder 1/4 tsp
Hing 1/2 tsp
Mustard 1/2 tsp
Urad dhal 1 tsp
Oil 1 ½ tbsp
Preparation time 10 min
Cooking time 20 min



Text Procedure

Soak toor dhal, channa dhal and red chili for 1 hour in water. After the soaking period, strain the water. Steam it for 10 minutes so that the dhal is 3/4 cooked.Add hing, turmeric powder, salt to steamed dhal.Coarsely grind all the ingredients to get crumbled dhal.(non sticky granules)

Step 2
Cook beans in pressure cooker for 1 whistle. Switch off and release pressure slowly.This is to reduce the cooking time of beans and also retain the original colour of the vegetable.
Step 3
Season mustard, urad dhal in oil and then add cooked beans and crumbled dhal. Saute for 5 minutes.
A tasty and non sticky Paruppu Usili is ready
