This is an instant neer dosai variety that does not need any soaking. Addition of vegetable extract varieties -snake gourd or bottle gourd or ridge gourd adds extra flavor and taste to dosa and makes it more relishing.This can be served with smoked capsicum tomato chutney or any chutney of your choice.
- Rice flour – 1 cup

Take Rice flour 1 cup. Take snake gourd. Cut and take the tender seeds.
Grind the seeds with 1 cup of water in a mixie and filter the extract through a strainer. Add the extracted juice to the rice flour to form a batter.
Alternatively you can use ridge gourd or bottle gourd for juice extraction and adding to the rice flour.
Dilute the batter with 1 1/2 cups of water. Add salt to taste and mix well. Instant dosa batter is ready.
Keep pan on the stove with medium-high flame. Grease the pan with oil and wipe off.
Pour the batter evenly on the pan. Flip the dosa to the other side after 35-40 seconds.
Instead of flipping dosa, you can also cover with a lid and allow it be cooked from one side.
After 30 seconds, Instant Neer dosa with nice vegetable flavor is cooked and is ready to be served.
