Akki roti is a delicious and healthy flat bread popular in Karnataka. It is made from rice flour,vegetables and greens that makes it an excellent breakfast or lunch time dish. Akki roti is best served with chutney. There are several variations of akki roti in Karnataka. Akki roti can be made thick or thin as per individual’s taste. A greased parchment paper or banana leaf or wet cotton cloth can be used to make the flattening of the dough.
Rice flour 1 cup
Grated coconut ¼ cup
Finely chopped capsicum ¼ cup
Finely chopped onion ¼ cup
Finely chopped fenugreek ½ cup
leaves (பொடியாக நறுக்கிய வெந்தய கீரை)
Cumin seeds (சீரகம்) 1 tsp
Finely chopped green chili 2 nos.
Channa dhal (soaked) 2 tbsp
Salt & Oil
Preparation time = 10 min
Cooking time = 25 min
Makes = 5 Rotis
Chop onions,capsicum,fenugreek leaves,carrots and grate fresh coconut. You can also add other vegetables like cabbage, knol kohl and coriander leaves.
Add the above ingredients to rice flour and mix well.
Add small quantity of water. Knead tightly to make stiff dough. The dough should be moist but not sticky.
Take orange sized dough. Keep it on greased parchment paper or greased banana leaf and cover it with parchment or any transparent paper.
Spread with any flat based object evenly to desired thickness
Transfer to a hot pan.Pour 1 tsp oil . Keep stove in low-medium flame. Cover with lid and cook for 3-4 minutes.
Remove cover. Flip to the other side and add 1 tsp of oil. Cook for another 1-2 minutes.
Remove the cooked roti from pan. Hot rotis are very tasty. Serve with coconut chutney or mint chutney. In this video, coconut chutney preparation is shown.
