Vella ( Jaggery) Seedai is a traditional sweet made during the festival of Sri Krishna Jayanthi / Gokulashtami / Krishna Janmashtami as it is called in different parts of India.
Ingredients
- Raw rice flour* – 1 cup
- Roasted Urad dhal flour** – 1 tbsp
- Sesame(Til) seeds – ½ tsp
- Grated Coconut – 2 tsp
- Jaggery – ¾ cup
- Cardamom – ½ tsp
- Butter – 15 grams
- Oil (for deep fry)
Note:1)* Soak raw rice for 1 to 1 ½ hours. Drain it and dry it in muslin cloth. After 1 hour grind in a mixie or flour mill. Sieve it nicely
2)** Roast urad dhal till it becomes golden colour, grind in a mixie and sieve it 2-3 times. If not done properly, the dough when put in oil will burst and could cause injuries.
3) Initially make 2-3 seedai balls from the dough for checking. Fry them in oil. If the balls are breaking , then add 2-3 tbsp of roasted and sieved rice flour to the dough and make fresh seedai balls for frying.
