This is a traditional sweet dish prepared during the festival of Ganesh Chathurthi. Being a steamed item it is healthy. Traditionally the inside stuffing or pooranam is made of coconut and jaggery. Other stuffings made of dry fruits and dhal can also be tried. You can also try different shapes for the outer shell. Moulds are also available.
Raw rice – ½ cup
Water — 1 cup
Milk — ¼ cup
Salt — 1 pinch
Gingelly oil — 3 tsp
Jaggery — ¾ cup
Water — ¼ cup
Cardamom — ½ tsp
Fresh coconut grated – 1 cup
Ghee — 1 tsp
Note: Alternate method for outer layer: Use raw rice flour ½ cup, hot water 1 cup, milk ¼ cup, salt 1 pinch and gingelly oil 1 tsp. Mix all and make soft dough
Preparation time : 30 minutes
Cooking time : 08 minutes
Makes : 9- 10 nos.
Add 1 cup raw rice to a bowl and soak for 1 hour
- Drain soaked water
- Add 1/2 cup fresh water
- Grind it fine.
- Dilute with another 1/2 cup water to get rice flour
Heat pan in low flame. Add 1 tsp of gingelly oil. Add ground rice flour to the pan. Add 1/4 cup milk.
Allow it cook and become thick dough.
Touch dough with wet hand. If it is not sticky , it is cooked and can be taken off the stove. Else continue for some more time.
Transfer the cooked dough to a bowl and mash it. The outer layer of Vella kozhukattai (Modhakam) is now ready.
Take jaggery 3/4 cup and add 1/4 cup water. Heat and allow jaggery to melt. Remove the sediments and transfer the jaggery syrup to a pan and allow it to boil. Add 1 tsp ghee, 1/2 tsp cardamom. Boil for 3-4 minutes.
Add grated coconut. Stir well till the mixture gets thick. Now the stuffing (pooranam) is also ready.
Make lemon sized balls of rice dough. Also make round balls of pooranam ( Inside stuffing).
Apply oil in palm. Make the outer shell ( rice dough ball) like a cup by applying pressure with one thumb and rotating it with hand.
Keep one ball of pooranam in the cup and close the outer shell so as to fully cover the pooranam.
Keep all the stuffed modhakam or Kozhukattai in a steamer and steam it for 8 minutes in a low flame.
Switch off and open the lid. Vella kozhukattai( Modhakam) is now ready.
