
Thengai Poli/ Kayi Holige
Kayi Holige as it is called in Karnataka is very popular and is served in marriage function and parties. In this post, preparation using wheat flour which has more fiber has been shown instead of conventional maida. It is some what soft and has crunchy taste. Jaggery has been used to give the sweetness and those who like more sweet can increase the quantity according to their taste. It is referred to as Thengai poli in Tamil as thengai refers to coconut which is used for the pooranam along with jaggery.
Ingredients
Wheat flour – 1 cup
Grated coconut – 1 cup
Jaggery – 1/2 cup
Cardamom – 1/2 tsp
Oil – 5 tsp
Salt – 1 pinch
Preparation time – 25 min
Cooking time – 20 min

Step1- Wheat dough Preparation
Take Wheat flour 1 cup and add a pinch of salt and 1 tsp of oil. Add water and mix well to form dough. The dough should be softer than chappati dough. Knead the dough for 3-4 minutes and add 2 tsp oil. Close with a lid and keep aside for 3 hours.
Step2- Pooranam Preparation
Take grated coconut 1 cup & dry grind in a mixie. Transfer the ground coarse coconut powder to a bowl. Keep stove again in medium flame.
Take Jaggery 1/2 cup in a pan . Add water 1/4 cup .Keep the stove in medium flame and allow jaggery to melt. Switch off the stove. Strain the jaggery water to remove the sediments. Add 1/2 tsp cardamom powder,ground coconut .
Keep stirring until pooranam becomes non sticky and soft. Once pooranam becomes soft and non sticky , make lemon sized balls out of pooranam.
Step3- Stuffing Pooranam and rolling
Knead wheat dough for 2 minutes.Pinch big lemon sized wheat dough.Dust it in wheat flour and flatten it with rolling pin.Stuff pooranam and close
Dust it with wheat flour.Roll it with even pressure to get a thin layer.
Step 4- Roasting
Keep Tawa on the stove. Add few drops of oil. Keep Stove in medium flame.Roast the poli (stuffed dough -rolled and flattened ). Add few drops of oil on the poli being roasted.
Roast both sides till golden color is seen. Soft and crunchy thengai poli is ready. Serve it with ghee for enhanced taste.
Alternate method – Stuffing and rolling
Make cup from wheat dough and stuff pooranam. Apply flour in between to avoid dough sticking.
