Shakarpara/Shankarpali/Diamond(Square) biscuit- It is a famous item for Diwali especially for Maharashtrians and Gujaratis.It can be made as sweet or savoury. Instead of only maida, it can be a mix of maida and wheat flour in equal proportions.
MAIDA 2 cups
GHEE 1/4 cup
Milk 1/4 cup
Sugar 1/4 cup
Oil for deep fry
Salt One pinch
Dissolve sugar in warm milk
Add hot ghee to maida.Coat evenly. Add a pinch of salt to enhance the taste.
Make stiff dough adding milk with maida flour
Keep aside for 2 hours.
Take orange size dough. Roll it using rolling pin to thickness of 3-4 mm.
Trim edges & Cut either diamond shape or square shape pieces
For deep fry- Keep stove in low flame.Put maida pieces gently in medium hot oil.
Stir gently.Flip the pieces to ensure uniform frying. Remove when the pieces turn golden brown.
