Ridge gourd curry is a healthy, delicious and simple to prepare recipe. Ridge gourd is known as Peerkangai in Tamil , heerakai in Kannada, beerakai in Telugu and turai in hindi.Both kootu and curry can be made with this vegetable.
Ridge gourd (பீர்க்கங்காய்) 300 g
Turmeric powder ¼ tsp
Mustard ½ tsp
Urad dhal 1 tsp
Oil 2 tsp
For dry powder
Red chili 2 nos.
Coriander seeds(Dhaniya) 2 tbsp
Urad dhal 2 tbsp
Channa dhal 1 tbsp
Hing ¼ tsp
Preparation time = 05 min
Cooking time = 10 min
Step 1: Buy tender ridge gourd and peel the outer skin. Cut into medium sized dice.
Step 2: Making dry powder for mixing with curry – Roast the ingredients such as red chili,coriander seeds,urad dhal,channa dhal,Hing in 1 tsp oil. Roast till the colour changes to golden brown. Dry grind in a mixie.
Step 3: Roast mustard seeds in 1 tsp oil. Add urad dhal after mustard crackles. Roast till golden brown colour is reached and then add cut ridge gourd vegetable,turmeric powder and salt. Cover with lid and cook with medium flame.Saute in between till it cooks completely. Add dry roasted powder. Mix well.Turn off stove. Tasty ridge gourd curry is ready.It goes very well with rice or chappati.
