How to make crisp restaurant style masala dosa

Masala dosa is one of the most popular breakfast as well as snack item through out India. In this post I show you how to make super tasty and crisp restaurant syle masala dosa using dosa batter as well as idli batter. The crisp masala dosa ( potato masala stuffed) along with side dish for idli and dosa such as coconut chutney, red chutney and sambar enhances its taste.

Ingredients for Masala dosa

Idli rice 1 cup

Raw rice 1/4 cup

Tur dal 2 tsp

Urad dal. 1/4 cup

Chana dal 2 tsp

Fenugreek 1 tsp

Sugar 2 tsp




Preparation time 20 min

Cooking time 4-5 minutes for each dosa

Makes 12 nos. of dosa

Text Procedure

The process comprises of two steps 1. Making the dosa batter 2. making dosa
Making dosa batter
Step 1
Soak idli rice and raw rice combo in water for 4 hours.
Step 2
Take a mix of ingredients like tur dal, urad dal,chana dal, fenugreek and soak for 4 hours.
Step 3
Strain the soaked water. You can use soaked water during grinding. Grind both the soaked items separately in mixer-grinder. Grind smoothly. Mix both the batter together and mix well.
If you are using wet grinder, you can grind soaked items (rice & dal mixture) together.
Step 4
Add salt and mix well. Allow it to ferment for 12-14 hours.
Step 5 ( After 12-14 hours of fermentation)
Add sugar and mix well again. The batter should be of flowing consistency.
Step 6 ( Making dosa from batter)
Heat greased Tawa (dosa pan) .Keep stove in medium-high flame. Heat for 5 minutes. Sprinkle water and wipe it .
Pour the dosa batter on the tawa and spread it in circular motion (dosa shape). After one minute pour 1 tsp ghee and 1 tsp oil .Cook for 2-3 minutes.
Step 8
Apply red chutney and stuff potato masala.
Step 9
Fold the dosa and take it out of tawa. Crisp paper masala is now ready.
