Raw mango juice (Aam ka panna in Hindi) is very much sought after drink in summer season. Summer is mango season for those who live in tropical countries. We get different varieties of mangoes both raw and ripe forms in the market. In this video i am covering how we can prepare mango squash(concentrate) from raw mangoes in under 30 minutes and store it freezer for long duration storage and make raw mango juice instantly whenever needed using the mango squash or concentrate.People enjoy the raw taste as much as they love the fruit.
Ingredients
Raw tart mango – 4 nos. (approx.900g)
Jaggery or Sugar – 3 cups
Roasted Cumin seed powder – 2 tsp
Salt – 2 tsp
Black salt – 1 tsp
Dry ginger powder – 2 tsp
Cardamom powder – 1 tsp
Dried mint leaves (pudina) – 2 tsp
Preparation time : 10 min
Cooking time : 25 min

How to mango raw mango squash in 30 minutes?
Step 1
In a pressure cooker add raw mangoes and water and pressure cook for 2 whistles
Step 2
Now mangoes are cooked. Remove skin and cut into small pieces. Add water and grind it in a mixie. Mango pulp is ready.
Step 3
Take jaggery or sugar in quantity of 1.5 times quantity of mango pulp. Here I have used jaggery
Step 4
Add water in jaggery. Boil 3 to 4 min.
Step 5
Strain jaggery syrup and add mango pulp.Add salt and boil for 3-4 minutes. Turn off stove.
Step 6
Add black salt , roasted cumin seed powder and cardamom powder. Mix well.Now raw mango squash is ready. Store in a glass bottle and keep it in freezer.
Step 7
(optional) Rinse fresh mint leaves and dry in shade for 2 days. Store it in bottle
Step 8 – How to Make instant raw mango juice( Aam panna) from Mango squash?
Take mango squash 1/2 cup and water 1 1/2 cup.Add cumin seed powder, dry ginger powder,Take dry mint leaves in palm and coarsely. Add it in mixture. Blend nicely.Now sweet tangy raw mango juice (Aam panna) with mint leaf flavour is ready to serve.
