Puliyodharai (puliyogare) is  Tamarind rice prepared using spiced tamarind paste known as “Pulikaichal”. It is very popular in the south india. It is also a prasadam item in temples. It is also made during festivals , marriages and other important functions.



Tamarind             – 2 Lemon size(40 g approx.)

Coriander seeds  – 2 tsp  Gingelly oil  -2 tbsp

Sesame seeds     – 1 tsp  Curry leaves  -20 nos

Fenugreek          – 1 tsp  Salt to taste

Turmeric powder- 1/2 tsp

Hing                   – 5 grams

Mustard              – 2 tsp

Urad dhal          -1 tbsp

Channa dhal     – 1 tbsp

Ground nuts    – 1 tbsp.

RedChilli          – 15 nos.

Cooking time  : 20 min

Makes              : sufficient for 2 cups of raw rice cooked with 5 cups of water


Raw rice 1 cup cooked with 2 1/2 cups water

Pulikaichal – half the prepared quantity as above

For dry powder ( Optional)

Coriander seeds  – 1tsp

Black pepper      -1/4 tsp

Urad dhal            -2 tsp

Channa dhal        -2 tsp

Red Chilli             -2 nos

Oil                       – 1 tsp

The preparation of Puliyodharai involves two stages. 1. Preparation of Pulikaichal 2. Preparation of Puliyodharai (Puli sadam) using pulikaichal.

Step 1 – Soaking

Soak Tamarind – 2 lemon sized (40g) in 1 1/2 cups of water. Extract tamarind water after soaking for some time.

Step 2

Keep pan on stove and  add 1 tbsp Gingelly oil. Add other ingredients- Hing 5 gms, mustard 2 tsp,ground nuts 1 tbsp, Urad dhal 1 tbsp, Channa dhal 1 tbsp,  Red chilli 15 nos ( cut to pieces) and roast. Add curry leaves.


Now add extracted tamarind water and  salt to taste. Boil till the tamarind water with ingredients thickens.


Step 3 – Dry roasting

Take another pan and add 2 tsp coriander seeds .Dry roast


Wash 1 tsp Sesame seeds using a strainer. After washing and straining the water, add the washed sesame seeds to the pan and dry roast till it crackles.


Dry roast fenugreek 1 tsp till golden brown color. Add turmeric powder 1/2 tsp and stir for 20 seconds.


Grind all the dry roasted items together.

Step 4 – Pulikaichal ready

When the tamarind water mixture thickens,add the dry roasted and ground powder and mix well. Pulikaichal is ready.


Step 5- Puliyodharai Preparation

Take Raw rice 1 cup and cook with 2 1/2 cups of water. Add 1 tbsp of gingelly oil and mix. The pulikaichal prepared makes for 2 cups of rice cooked with 5 cups of water. As we are now cooking only one cup of rice, half the prepared quantity of pulikaichal is sufficient. Take half the quantity of pulikaichal and mix with cooked rice. Tasty Iyengar Puilyodharai is ready


Step 6- Taste enhancer powder (Optional)

This is an optional procedure. Some people prefer to add some spice powder to  puliyodharai to enhance the taste.

Take the following items-

Coriander seeds  – 1tsp

Black pepper  -1/4 tsp

Urad dhal  -2 tsp

Channa dhal  -2 tsp

Red Chilli  -2 nos

Roast the above ingredients in 1 tsp oil and dry grind. Mix with puliyodharai.
