Puli Milagai (Green Chilli) Pickle is very tasty pickle that goes well with Chappati,Idli,Dosa,curd rice etc. It is very easy to prepare and can be preserved for 15 days in refrigerator.
Green Chilli — 100 grams
Tamarind — 1 big lemon size( 20 grams)
Mustard — 1 tsp
Fenugreek — 1 tsp
Turmeric powder — 1/2 tsp
Hing — 10 grams
Jaggery — 2 tsp (Optional)
Gingelly oil — 1 tbsp
Salt to taste

Cooking time : 10 minutes
(Washed and dried) green chilli
evenly cut 100 g
Take Lemon sized Tamarind ( approx.10 grams) and soak in a cup of water.
Dry roast fenugreek . Add 1/2 tsp of turmeric powder and continue roasting for 30 secs and grind to powder.
Place a pan on the stove and add 1 tbsp of gingelly oil. Add few pieces of Hing (Asofoetida).
Add 1 tsp of mustard seeds and allow it to crackle.Add the cut green chilli.
Add the soaked tamarind water. Allow it to boil . Add 2 tsp of jaggery (Optional). Add Salt to taste.
Check to see if the chilli is fully cooked
Add the roasted and ground fenugreek-turmeric powder.Stir well for 30 seconds. Puli milagai thokku / Green chilli pickle is ready. Transfer to a container once it cools to room temperature.
