Palak Paneer

Palak (Spinach) Paneer

Palak(Spinach)  Paneer is a healthy side dish that goes great with chappati/ Rotis. In this post a quick method of preparing Palak (Spinach) Paneer is described. Lot of time is saved as all the major ingredients are put in the pressure cooker and cooked in one go.

Ingredients

Palak (Spinach)             — around 400 gms

Onion                           — 1 medium size

Green chilli                 — 4 nos.

Ginger(Shredded)      — 1 tsp

Garlic                        — 6 cloves

Tomato                    — 1 no.

Coriander powder  — 1 tsp

Turmeric powder  — 1/4 tsp

Garam masala      — 1/2 tsp

Cumin seeds         — 1 tsp

Paneer                  — 100 gms

Hing                     –1/2 tsp

Sugar                   — 1/2 tsp

Lemon                  — 1 no.

Milk                      — 1/2 cup

Cream                   — 2 tbsp

Oil                        — 1 tbsp

Salt                       — to taste

Preparation time        : 8 minutes

Cooking time               : 6 minutes

Makes                           : appr.2 cups

Step 1

Take Palak approx. 400 g (washed and drained) in a pressure cooker vessel. Add the following items- 1 no. onion chopped, green chilli 4 nos, Ginger shredded 1 tsp, garlic 6 cloves,tomato 1 no.,Coriander powder 1 tsp,Turmeric Powder 1/4 tsp.Close the lid. Stove in high flame.Place the vent weight

Step 2

Within 2 minutes you will get the 1 st whistle. Switch off the stove. Start depressurizing the cooker by slightly lifting the vent weight and allowing steam to escape slowly. It is important to start the depressurization process immediately after switching off as otherwise it is not possible to retain the green color of palak.

The alternate method to depressurize is to place the cooker under a tap and cool it with water.

Step 3

Once all steam is out , remove the vent weight and  open the lid. After 5 minutes, the palak mixture can be taken out of the cooker and ground in a mixie.

Step 4

Place  a pan on stove with medium flame. Add 1 tbsp oil and add Cumin seeds 1tsp, Hing 1/2 tsp. Add ground palak mixture and mix the ingredients.

Step 5

Add Garam masala 1/2 tsp, Sugar 1/2 tsp and Salt to taste. Add milk 1/2 cup ( instead of water) to add richness. Mix well. Boil for 2 min

Step 6

Add Cubes and crumbled Paneer 100 g. Again mix well and switch off the stove. Now transfer the mixture to another vessel. Squeeze 1 lemon to the mixture and garnish with 2 tbsp of fresh cream. Palak Paneer is ready
