Nokkal as it is referred in Tamil Nadu is a sweet variety with cashew nut embedded in sugar coating. It is generally made during marriages and is served as viradha batchanam. It is quite easy to make and is liked by many although it is generally not made outside marriage functions. My children are crazy for this sweet. I make it for festivals like Deepavalli and i also recommend this sweet for others to try it out.
Whole cashew nut — 200 g
Sugar (for medium coat) — 400 g
Ghee — 2 tbsp
Cardamom powder — 1 tsp
Milk — 1 tbsp
Water — 1 cup
Note: The above measurement of sugar is for medium coat on cashew nut. If thicker sugar coating is desired then accordingly increase the sugar quantity.
Preparation time – Sugar syrup : 07-08 minutes
Cooking time – Nokkal : 30 minutes

Heat pan in low flame. Add 2 tbsp ghee. Add cashew nuts and roast.
Take sugar in a vessel and add 1 cup water and mix. Heat in low flame. Add 2 tbsp of milk and allow it to boil. Skim the impurities.
Add 1 tsp of cardamom powder and mix well.
As the sugar syrup thickens ( “pagu padam” in Tamil) , take one drop of syrup and transfer it to a plate. Check for consistency by touching the sugar syrup on the plate with the thumb and the index finger. As the fingers are slowly drawn apart then the sugar solution should form a single line connecting the two fingers. Then consistency of sugar solution is achieved. Switch off the stove and place the vessel with sugar syrup in another vessel containing hot water.
Pour the sugar solution slowly onto the roasted cashew nuts using a ladle from 1 1/2 to 2 ft height. It is advised to have two persons for this process- one person to pour the syrup and another person to mix it .Care should be taken while pouring the hot sugar syrup so that it does not fall on the other person’s hands. Shake the vessel containing the cashew nuts so that the sugar solution is uniformly applied on the cashew nuts. Alternatively you can keep the vessel stationery and stir the cashew nuts with another ladle so that the sugar solution mixes uniformly. After two or 3 ladle coating of sugar, you can cool it( Cashew nuts) for 5 minutes and again repeat the process under step 5 till the sugar solution is fully utilized. In this preparation medium coating is considered. If more coating thickness is desired sugar quantity has to be increased and more coats need to be applied. In case the sugar solution crystallizes during the process, then add 1-2 tbsp of water and heat the solution. Once the application is complete , allow it to dry and transfer to a bowl.
