Mullumurukku (முள்ளு முறுக்கு) is a crispy item that is made during festivals and normal days. Murukku means twisted as the shape is twisted. The term mullu means thorny. It is so called because of rough edges.
The main ingredient is the Murukku Maavu (flour) which is prepared with mix of rice and slightly roasted moong dhal and channa dhal and grinding it in a flour mill. The alternate method is to dry grind roasted dhals in a mixie and sieve them twice.Then mix it with rice flour. To obtain Murukku maavu mix rice flour 4 cups and dhal flour 2 cups.

Butter 1 ½ tbsp
Hing 1/2 tsp
Sesame seeds 1 tsp

Cooking time 25 min
Makes 09 nos.(medium size)
Step 1: Mix the ingredients and make firm dough.
Step 2: Use 3 star plate in Murukku maker machine and squeeze the dough in circular motion in hot oil. After 3-4 min gently flip to the other side for uniform frying. Remove the murukku from oil once it attains golden brown colour. Store in air tight container.
