Mixed Vegetable Pickle without vinegar

Homemade Mixed Vegetable pickle without vinegar(வெஜிடபிள் ஊறுகாய்) – In this video post, i show you how you can quickly make super tasty mixed vegetable pickle at home without using any preservatives like vinegar. We can use assortment of vegetables like raw mango, cluster beans(கொத்தவரங்காய்), broad beans (அவரைக்காய்) , carrot, knol khol (நூல்கோல்). You can also include other vegetables like cauliflower, cucumber, egg plant etc as per your choice. I added lemon juice instead of using vinegar. I added spices to enhance the taste. It will stay fresh in the refrigerator for about 2 weeks. It is so easy to make that you can always make in small quantities as and when required.Only cutting of vegetables will take some time. Rest of the process is very simple

Ingredients

Finely shredded vegetables-
Broad bean – ½ cup
Cluster bean – ½ cup
Carrot – ½ cup
Knol khol – ½ cup
Raw mango – ½ cup
Fresh ginger – ¼ cup
Green chili – 10 nos. slit
Mustard – 2 tsp
Red chili powder – 2 tsp
Turmeric powder – ¼ tsp
Hing – 1 tsp
Roasted fenugreek powder ½ tsp
Roasted sesame seeds – 2 tbsp
Lemon juice from 3 lemons
Gingelly Oil – less than ¼ cup
Salt
Preparation time = 30 min
Cooking time = 10 min
Makes 3 cups

Step 1
Rinse and wipe dry all fresh vegetables.
Step 2
Peel outer skin of carrot and knol khol . Remove edges of broad bean and cluster beans.
Step 3
Finely shred all vegetables.
Step 4
In a bowl add the shredded vegetables , salt and lemon juice. Mix well.
Step 5
Heat oil in a pan.Add mustard. Once mustard splutters, add chili powder,turmeric powder, chopped fresh ginger and slit green chili. Saute for few seconds. Turn off the stove. Add roasted sesame seeds and roasted fenugreek powder. Mix well. Transfer the ingredients to the bowl with shredded vegetables.
Step 6
Mix well and keep aside for one day. Don’t keep beyond that period outside. In summer it may be spoiled quickly. Transfer to glass or ceramic jar and keep in refrigerator. Use before two weeks.
