Mangai ( Mango) Pachadi

𝐌𝐚𝐧𝐠𝐨 𝐏𝐚𝐜𝐡𝐚𝐝𝐢 ( மாங்காய் பச்சடி) is one of the special recipes that is a must for Tamil New year’s day. As per the Tamil customs, the preparations should have a balance of six tastes or  𝐚𝐫𝐮𝐬𝐮𝐯𝐚𝐢 (அறு சுவை) as it is called in Tamil. 🔥 They are 𝐒𝐰𝐞𝐞𝐭 (இனிப்பு),𝐒𝐚𝐥𝐭𝐲 (உவர்ப்பு),𝐬𝐨𝐮𝐫 (புளிப்பு),𝐛𝐢𝐭𝐭𝐞𝐫(கசப்பு),𝐩𝐮𝐧𝐠𝐞𝐧𝐭 (கார்ப்பு),𝐚𝐬𝐭𝐫𝐢𝐧𝐠𝐞𝐧𝐭 (துவர்ப்பு). 🔥The recipe has all six tastes in it and it is symbolic of mixed human emotions . 


Raw mango              – 1 no. (approximately 250 g)
Jaggery                     –  3/4 cup to 1 cup 
Salt                            – 1/4 tsp
Oil                              – 1 tsp
Red chili                   – 1 no.
Turmeric powder     – 1/4 tsp
Mustard seeds         – 1/2 tsp
Fresh neem flowers -15-20 no.

Preparation time     :05 min

Cooking time          : 20 min

Makes                      : 2 – 21/2 cups approx.




Text Procedure

𝐒𝐭𝐞𝐩 1
For 250 grams Raw mango , take 3/4 cup – 1 cup jaggery. Add water, heat and ,melt. Strain the jaggery water to remove the sediments. Jaggery syrup is ready.
𝐒𝐭𝐞𝐩 2
Peel raw mango (மாங்காய்) skin and chop.
𝐒𝐭𝐞𝐩 3
Add water to the chopped mango pieces and pressure cook for 1 whistle.
𝐒𝐭𝐞𝐩 4
To the cooked mango , add the strained jaggery syrup. Also add turmeric powder and salt. Boil for 5 minutes.

Add fresh neem flower (புதிய வேப்பம்பூ ) in a pan and dry roast till it turns dark brown in colour.
𝐒𝐭𝐞𝐩 6
Heat oil. Add red chili and mustard. Let it splutter. Turn off stove.
𝐒𝐭𝐞𝐩 7
Add roasted neem flower and the tempered chili-mustard ingredients to the cooked mango jaggery solution. Mix well. Mango Pachadi is ready.
