This is a very popular sweet made at home as well in sweet shops. It is not only yummy in taste but easy to make also. It takes very less time to prepare and also less effort. No wonder it is made for festivals like Deepavali and also many parties. Both elders and children love this sweet.
Cashew nut powder — 1 cup
Powdered Sugar — 1/2 cup
Water — 1/4 cup
Cardamom powder — 1/2 tsp
Ghee — 1 tsp
Note: The cashew nuts must be dry. If it is taken out of the fridge, allow it to dry before powdering. Powder in a mixie in short intervals and sieve in a coarse mesh.

Take powdered sugar 1/2 cup in a hollow pan and 1/2 cup cup water. Keep it on the stove in low flame.
Stir. Allow sugar to dissolve. Add 1/2 tsp cardamom powder.
When sugar solution starts boiling, it thickens forming a syrup. Check for one string consistency by taking a drop sample on to a plate. Touch it with fingers as shown and draw the fingers part slowly. Then it sugar syrup must show single string consistency. Switch off the stove and add 1 tsp of ghee and mix.
Add the cashew nut powder. Mix well for 3-4 minutes. Stir. When the dough becomes non sticky and rolls as the ladle is moved , transfer to a greased paper.
Spread the dough evenly. Flatten it evenly with a rolling pin. The dough is now ready
Make pieces diagonal shaped or square shaped as per choice. Garnish with silver rake or dry fruits. Kaju katli is now ready.
