
How to make Karasev
Karasev is a slightly hot, spicy and crispy savory made with gram flour (besan flour or Kadalai maavu in Tamil), salt, ghee and spices. These are crunchy with flavor of black pepper and cumin seeds. Karasev taste is different from other savouries like murukku or ribbon pakoda. Karasev is made usually made by filling the dough in murukku machine using a die with bigger hole to give the shape. The dough is squeezed through the die with bigger size hole. My recipe has more ghee and pepper flavor and does not absorb much oil.
Ingredients
Besan flour – 2 cups
Rice flour – 1 cup
Black pepper- 3 tsp (Coarsely crushed)
Cumin seed – 2 tsp
Hing – 1/2 tsp
Salt
Ghee – 3 tbsp
Oil

I have not used garlic and baking soda . Those who prefer garlic can add so. All most all shops add baking soda for getting the crispiness. But I am not in favour.
Alternate way for making karasev dough:
1. I have used Besan flour and rice flour in the ratio of 2: 1 . Outside shops use a combination ratio of 3:1 2.Adding baking soda – Add baking soda 1/4 tsp with ghee 2 tbsp & mix well. Then add other ingredients and make dough. In my recipe i have used more ghee for crispness instead of using baking soda. 3.Garlic paste, carom seeds and chili powder can be added as individual’s taste preferences
