How to make healthy pumpkin soup

This post describes the recipe how to make winter special healthy pumpkin soup. This soup has the minerals, fibre, vitamins and is good for immunity. Pumpkin is more popular vegetable all over the world. This vegetable is packed with minerals, vitamins, fibre and also antioxidants. in winter people prefer to take more soups and keep them warm. This soup is suitable for all ages. Fresh cream is optional and can be skipped if necessary for elders.

Ingredients

Butter – 15 grams

Chopped garlic – 1 tsp

Onion – 1 no (chopped)

Bay leaf – 1 no

Chopped pumpkin – 2 cups

Milk – 1 cup

Salt Crushed pepper – 1 tsp

Fresh cream – 1/4 cup

Mint leaves

Step 1

Saute garlic, Onion, bay leaf and chopped pumpkin in butter for few seconds. Avoid doing it for more time or otherwise butter will turn to ghee and the colour may change.

Step 2

Add milk and boil for 4-5 minutes until the ingredients are cooked.

Step 3

Grind to paste at room temperature

Step 4

Transfer ground paste to a pan. Add water and dilute as required

Step 5

Add salt, crushed black pepper and fresh cream. Boil for 1 minute.

Step 6

Garnish with mint leaves. Hot healthy vitamins, minerals and fibre packed pumpkin soup is ready.
