Moist and spongy apple cake without eggs can be baked in an oven or if oven is not there , we can use a pressure cooker or even a pot. The procedure described for apple cake can be adopted for other fruits like orange or pine apple
Apple 2 nos. (350g)
Maida/Plain flour 1 cup
Baking Soda 1/2 tsp
Salt 1 pinch
Cinnamon powder ½ tsp
Sugar ½ cup
Oil 1/3 cup
White vinegar 1½ tsp
Vanilla essence 1 tsp
Salt for baking 1 cup
Preparation time = 15 min
Cooking time = 50-55 min
Put 1 cup salt in a pan and keep a stand on it.Cover with a lid annd heat in low flame for 10 min.
Grease 6″ cake tin and lining bottom of the tin with parchment paper. Dust it with maida.
Take 2 nos. apple. Peel the outer skin with a scraper. Take one apple and cut to small pieces. Grind the apple pieces in a mixie and sieve it to get apple puree. Take 1/2 apple and make slices for decoration. Take another 1/2 apple and grate it.
Dissolve sugar in apple puree by mixing well
Add ingredients like oil, white vinegar and vanilla essence . Mix well
Add dry ingredients(maida flour, cinnamon powder,pinch of salt) to the mixture. Fold it gently
Add grated apple pieces. Mix gently
Transfer to cake tin. Decorate topping with sliced apple pieces.
Keep in heated pan and cook for 50-55 minutes
After 50 minutes, check if the cake has been cooked by inserting a knife. If the knife edge is clean without any thing sticking to the knife, then the cake is cooked.
Apple cake is ready.
Gently invert the cake tin on the wire rack.
Allow apple cake to cool completely and slice the cake to make pieces
Moist and spongy cake with cinnamon flavor is ready to serve
