How to make Eggless Chocolate Cupcake recipe

In this video post , I show you how to make eggless chocolate cupcake / eggless cupcakes chocolate at home without oven & with oven. If you do not have an oven at home, you can use a normal pan. In both the methods no cake mould is used. I have used greased steel cup with parchment paper as mould for baking in a pan. In the case of using oven, paper cups are used as mould. You get soft spongy moist cake in both the methods.

Ingredients

Fresh curd – 1/4 cup

Oil – 1/4 cup

Powdered sugar – 3/4 cup

Vanilla essence – 1/2 tsp

Maida – 1 cup

Corn flour – 2 tbsp

Cocoa powder – 1/4 cup

Baking powder – 1 tsp

Baking soda – 1/4 tsp

Salt – 1 pinch

Milk – 1/2 cup +2 tbsp

Choco chips – 2 tbsp

Step 1

In a bowl, add curd, sugar and oil. Whisk nicely for 3-4 minutes by using balloon whisk or ladle. Electric beater is not required.

Step 2

Add vanilla essence and mix well. Now wet ingredient mixture is ready.

Step 3

In a siever, add maida baking powder,baking soda,cocoa powder and salt.Sieve it. Now dry ingredient mixture is ready.

Step 4

Preheating of oven and pan:
Pan: Keep a stand on pan and cover lid. Heat the pan in low medium flame for 10 minutes.

Oven:Preheat oven at 160 deg C for 10 minutes.

Step 5

Add dry ingredients and wet ingredients mixture together and mix well.

Step 6

Add 1/2 cup milk.Mix well. Batter should not be very thick.Add about 2 tbsp of milk to make batter semi thick. Now cake mixture is ready.

Step 7

Cupcake mould: Using steel cup as a mould for pan baking and paper cup mould for oven baking.

Step 8

Keep parchment paper lining in steel cups and grease it by using oil.Greasing is not required for paper cup mould.

Step 9

Pour batter in steel cups for 1/2 the cup size.Tap each cup 2-3 times so that air bubbles will release.

Step 10

Non oven method

Place steel cups in preheated pan and cover lid. Keep stove in low medium flame. Bake for 30-35 minutes.

Oven baking: Place paper cups in a preheated oven. Bake at 160 degree C for 20-25 minutes.

Step 11

Insert a knife or stick inside baked cakes. If the stick or knife is non sticky then the cake is baked perfectly. If it is sticky, again switch on the oven and bake for few more minutes.

A soft and moist chocolate cupcake is ready.
