
Thayir Vadai/ Dahi Vada
Thayir vadai/ Dahi vada is a often made as a special item for various festivals and functions in South india and is a famous chaat item in north. It is liked by people of all ages. In this post both south indian style and north indian styles are covered.
Ingredients
Urad dhal – 1 cup
Green chilli – 3 nos.
Curd – 2 1/4cup
Coconut (grated) – 1/2 cup
Hing – 1/2 tsp
Oil for deep fry
Salt to taste
Garnishing
Coriander leaves,Mustard seeds,curry leaves, Green chutney , Sweet Chutney

Step 1
Take Urad dhal 1 cup . Soak in water for 1 hour. Drain completely after the soaking period is over.
Add green chilli 2 nos. Add little water and grind to smooth paste to get Vada batter.
Step 2
Take Curd 1/4 cup and churn well . Add salt .Add water 3/4 litres to make buttermilk.
Step 3
Transfer Vada batter to a bowl. Add little salt. Mix well for 3-4 minutes
Step 4
Take some batter in wet hand. Flatten to vada shape and gently drop in hot oil in pan for deep fry. Alternatively use a cup covered with plastic cover for flattening. Check if oil is at right temperature for frying with small amount of vada batter. Once oil is ready for frying , then drop flattened vada batter gently into oil. Keep stove in medium flame. When one side is fried , flip it to the other side for frying evenly. Remove the fried vadas to a plate.
Step 5
Warm the butter milk and switch off the stove. Soak the fried vadas for 15 min
Step 6
Take grated coconut 1/4 cup, 1 green chilli and grind to paste. Add fresh curd 1 cup to coconut paste. Also add Hing 1/2 tsp and salt. Season with crackled mustard and curry leaves.
Step 7
Transfer soaked vadas in serving bowl and add curd mixture. Garnish with coriander leaves. Thayir vadai is ready

Step 8
Take Curd 1 cup in a churner and churn it for smooth curd. Add Salt. Mix well.
Step 9
Transfer soaked vadas to serving bowl. Add curd. Garnish with green chutney and sweet chutney.Sprinkle red chilli powder.Add Chat masala powder.Garnish coriander leaves. Dahi vada is ready(North indian style)
