
Cornflakes Mixture (Cornflakes chivda) & Peanuts masala
Cornflakes mixture also known as Cornflakes chivda is generally a deep fried savory mixture consisting of many ingredients that add to its taste. This also includes dry fruits and spices of choice. My aim is to avoid deep frying in oil. I wanted to make it without deep fry but retaining the crispness.So I roasted corn flakes,flattened rice (poha) and peanuts in salt medium and added roasted fried grams and spices.
I have just presented a simple presentation of ingredients but you may add cashew nuts and raisins if you wish. I used only two tsp of oil to mix all the ingredients together. The cornflakes that we use here is different from the cereal that we take for breakfast. You can use the ready to use cereal cornflakes, roast them a bit and add in the spice mixture.
Peanuts masala – This is a spicy and crunchy teatime snack where fried peanuts are coated with besan flour. The specialty of this recipe is that peanuts are not deep fried in oil. It is roasted on heated salt layer. By avoiding deep frying in oil, this recipe is a healthy version. You can try this method easily at home and enjoy.

Ingredients- Corn flakes mixture
Corn flakes 1/2 cup
Flattened rice 1/2 cup
Groundnut 1/4 cup
Fried gram 1/2 cup
Oil 2 tsp
Red chili powder 1/2 tsp
Turmeric powder 1/4 tsp
Curry leaves
Salt for roasting 2 cup
Cooking time 10 min
Makes 1 1/2 cup
Ingredients for peanuts masala
Ground nut (peanut) 1/2 cup
Besan flour 1/4 cup
Rice flour 2 tbsp
Red chili powder 1/2 tsp
Turmeric powder 1/4 tsp
Hing 1/4 tsp
Oil 2 tsp
Salt 1 tsp
Preparation time 5 min
Cooking time 30 min
Makes 3/4 cup

Step 1
Heat salt in a low medium flame for few minutes.
Step 2
Add corn flakes 3-4 tbsp in salt for roasting.Stir continuously till cornflakes colour changes. Segregate from salt by using wired ladle. Roast cornflakes in batches.
Step 3
Roast flattened rice in salt layer. Stir continuously till it crackles. Remove and segregate from salt using wired ladle.
Step 4
In the same way roast peanuts. The outer skin peels after few minutes. Remove and segregate from salt as before
Step 5
Roast fried gram in a separate pan for a minute
Step 6
Mix all roasted ingredients and sieve to remove any excess salt.
Step 7
Heat 2 tsp oil in a pan .Add curry leaves,red chili powder,turmeric powder and saute. Then add to the roasted ingredients. Mix well and store in airtight container. Healthy crispy cornflakes mixture/Chivda is ready
Text procedure for peanuts masala
Step 1
Roast peanuts in a pan for 2 minutes. 50% roasting is sufficient. You need not roast it to maximum.
Step 2
In a bowl mix besan flour,rice flour,red chili powder,turmeric powder and salt. Add hot oil 2 tsp.Crumble the flour so that oil spreads uniformly in the flour mixture.
Step 3
Add water in small quantity and make it a stiff dough.
Step 4
Add roasted peanuts in the dough and mix it so that the peanuts are coated evenly.
Step 5
In a pan keep a stand and cover lid. Heat the pan for 10 minutes in low medium flame
Step 6
Spread peanuts in parchment paper or greased plate.
Step 7
Place it in the heated pan and cook for 15 minutes
Step 8
Open lid and separate sticking peanuts. Again cover the lid and cook for 10 minutes. Spicy and crispy peanut masala is ready without any deep fry.
