
Coconut Rice
Coconut rice (Thengai sadham in Tamil) is a tasty rice variety that is easily made at home for functions and for lunch pack for office and picnics.
Ingredients
Raw rice – 1/3 cup
Grated fresh coconut – 1/2 cup
Mustard – 1 tsp
Urad dhal – 1 tsp heaped
Channa dhal – 1 tsp heaped
Ground nuts – 1 tbsp
Cashew nuts – 1 tbsp
Red chilli – 2 nos.
Green chilli – 2 nos.
Shredded ginger – 1 tsp
Hing – 1/2 tsp
Curry leaves – 08 nos.
Lemon juice – 2 tsp
Gingelly oil – 4 tsp
Salt – to taste
