Bhindi ( Okra/ Ladies finger/ Vendaikai) masala is a favourite curry item for all ages across India.This semi dry curry goes well with both roti and rice. It is stir fried and is mild spicy. It is a healthy side dish for both roti and rice. There are many variations with bhindi like dahi(curd) bhindi, bhindi masala with gravy and without gravy. I usually prefer dry or semi dry version which is quite simple to make. I use bengal gram in my recipe to minimize the stickiness in the bhindi while it gets cooked.
Ingredients
Ladies finger/Okra/Bhindi/Vendaikai 250 grams
Shredded onion 1/2 cup
Tomato 1 no.
Turmeric powder ¼ tsp
Cumin seeds 1 tsp
Coriander seed powder 1 tsp
Bengal gram flour 2 tsp
Red chili powder 1 tsp
Garam masala 1 tsp
Oil 2 tbsp
Salt
Preparation time 8 min
Cooking time 15 min

Text Procedure
Step 1
Rinse Ladies finger in water and strain. Wipe dry thoroughly using a kitchen towel.
Step 2
Slit ladies finger vertically and cut into 1 ” pieces.
Step 3
Heat pan and add onions. Stir till it softens. Keep aside in the same pan Step 4
Add spices and saute for few seconds. Now mix with onions and stir
Step 5 Add cut okra(ladies finger) pieces and stir fry. Cover with a lid.
Step 6
Open lid after 2-3 minutes. Stir well and again cover with lid. Continue the process until it is 3/4 cooked.
Step 7
Add Tomato cut into pieces and seeds removed. Add salt and garam masala. cook 2-3 minutes.
Step 8
Very tasty and healthy stir fried dry bhindi masala is ready
