
Basundi
Basundi is a rich creamy dessert most popular in states of Gujarat, Maharashtra and Karnataka. Its popularity is spreading to other indian states also. It is enriched with toppings with nuts(almonds, pista), saffron,cardamom,chironji (In Tamil “Sara paruppu”)
Ingredients
Milk — 5 cup
Sugar — 1/3 cup
Saffron — 15-20 strands
Cardamom powder — ½ tsp
Mixed nuts — 1 tbsp
(Almonds,Pista,Chironji)
Cooking time : 25 minutes
Makes : 1 ½ cups approx.

Step 1
Take 5 cups of milk in a wider pan. Heat in medium flame. As milk starts boiling, add 1/3 cup sugar. Also add saffron 15-20 strands. Slowly stir few times.
Step 2
As milk starts boiling, it starts forming cream. Push the cream to one side. After sometime it will start creaming again. Push it again to one side. As this process continues, the cream becomes more and more and the quantity of milk reduces by about 1 1/2 to 2 cups. Switch off the stove. Add 1/2 tsp of cardamom powder and mix.
Step 3
Garnish with toppings from nuts (almond, pista), chironji (Sara paruppu). Yummy Basundi is ready.
