Aval( Poha/avalakki/Flattened rice) Vella Puttu is another variation of sweet puttu. As the name implies ( Tamil) it uses two major ingredients Aval (Poha / avalaki/ flattened rice) and vella (jaggery). Conventional puttu popular down south Tamil Nadu is made of plain rice and sugar. In this preparation both are avoided by using aval and jaggery. It is very much easy to make this puttu as not much effort is required and also healthy. This puttu can be tried out for morning breakfast or evening snack and in addition during picnics and festivals like Navratri. It is a healthy snack for all ages.
Ingredients
Aval (avalaki/Poha) – 1/2 cup
Jaggery – 1/4 cup
Water – 1 cup
Cardamom powder -1/4 tsp
Ghee – 1 tbsp
Cashew nut – 1 tbsp
Grated coconut – 1 tbsp
Preparation time : 10 minutes
Cooking time : 10 minutes
Makes : around 1 1/4 cup
Procedure

Step 1
Take 1 cup Aval in a strainer and wash it.
Step 2
Spread the washed Aval in a muslin cloth and keep it under fan to dry. After 15 min the Aval will be soft but dry.
Step 3
Roast the washed and dried Aval in a pan till color changes to light brown. Transfer it to a mixie jar and grind it coarsely.
Step 4
Jaggery Syrup
Take 1/4 cup jaggery in a vessel and add 1 cup water. Heat under medium flame allowing jaggery to dissolve. Filter the jaggery water to remove the sediments.
Step 5
Boil the jaggery water for 3-4 minutes. Add 1/2 tsp cardamom powder.
Step 6
Add the ground aval powder to the jaggery syrup. Switch off the stove. Mix well and leave it aside for 20-30 minutes.
Step 7
Sieve the mixture with coarse mesh. Rub with a ladle and break lumps.
Step 8
Garnishing
Add 1 tbsp ghee in a pan . Add 1 tbsp cashew nuts and roast. Also add 1 tbsp grated coconut and roast.
Step 9
Garnish the mixture. Aval vella putt is ready.
