4 Side dish recipes for Idli/dosa

The most commonly used side dishes for idli and dosa are coconut chutney, red chutney & sambar. Potato masala is stuffed in masala dosa. In addition people also use milagai podi (gun powder) with oil or ghee. In this post , i have shown how to make coconut chutney, red chutney, sambar and potato masala.

There are some variation in preparing these side dishes from one place to another. For coconut chutney i have used chana dal (bengal gram). Roasted chana dal can also be used in place of chana dal. Some other variations are also made in chutney such as peanut chutney, garlic chutney and onion chutney.

I made sambar in the simplest way by pressure cooking most of the ingredients together. Some people add little jaggery to sambar to give a little sweet taste. Pumpkin gives natural sweetness so i have avoided using jaggery.

I made potato masala in restaurant style. You can additionally add other vegetables like peas, carrot, beans etc and make it more nutritious.

Red chutney gives nice color, aroma and enhances dosa taste.

Ingredients for coconut chutney

Grated Coconut 1/2 cup

Chana dal 2 tbsp

Green chili 2 nos.

Sugar 1/4 tsp

Mustard 1/2 tsp

Hing 1/4 tsp

Salt

Oil 2 tsp

Curry leaves

Procedure for coconut chutney

Step 1

Heat oil in a pan. Roast chana dal (Bengal gram). Transfer to mixie jar.

Step 2

Add other ingredients – grenn chili,grated coconut,sugar and water. Grind coarsely.

Step 3

Add salt. Temper with mustard and curry leaves. Coconut chutney is ready.

Ingredients for sambar for Idli and dosa

Sambar onion 1/2 cup

Tomato 2 nos. chopped

Pumpkin 1/2 cup diced

Tur dal 1/4 cup

Sambar powder 3-4 tsp

Green chili 2 nos.

Tamarind 1 lemon size

Mustard 1 tsp

Hing 1/4 tsp

Salt

Oil 2 tsp

Curry leaves

Coriander leaves

Procedure for sambar

Step 1
In a pressure cooker add sambar onion, tomato, pumpkin, turdal, sambar powder, green chili, hing and water. Pressure cook 4-5 whistles.

Step 2
Mash cooked masala

Heat oil in a pan. Add mustard. Let it splutter. Add curry leaves. Add extracted tamarind water. Boil for 5 minutes. Add cooked masala and salt. Boil for 4-5 minutes. Add coriander leaves. Tasty sambar for Idli and dosa is ready.

Ingredients for red chutney

Red chili 2-3 nos.

Garlic 8 nos.

Onion 1 no. chopped

Tomato 2 nos. medium

Mustard 1/2 tsp

Salt

Oil 2 tsp

Procedure for red chutney

Step 1

Grind all ingredients(red chili,garlic,onion,tomato) together

Step 2

Heat oil in a pan. Add ground paste and salt. Saute till it thickens.

Red chutney is now ready.

Ingredients for Potato masala(aloo masala)

Boiled Potato 3 nos. diced

Onion 2 nos. chopped

Turmeric powder 1/4 tsp

Red chili 2 nos.

Cumin seeds 1/2 tsp

Chana dal 2 tsp

Green chili 2 nos.

Ginger 1 tsp chopped

Mustard 1 tsp

Hing 1/4 tsp

Salt

Oil 3 tsp

Curry leaves

Procedure for potato masala (aloo masala) for masala dosa

Step 1

Heat oil in a pan. Add mustard and let it splutter. Add red chili, chana dal, cumin seeds, green chili, curry leaves and hing

Step 2
Add chopped onion and little salt. Saute for 2 minutes

Step 3

Add boiled potatoes,turmeric powder,salt and water. Cook for few minutes.

Potato masala is now ready for masala dosa.
